What you'll do

This is a hands-on cooking experience using foraged wild herbs and spices. Maria, who has broad culinary knowledge, long experience, and a deep appreciation and respect for all kinds of Greek ingredients and raw plants, will guide you through the process, sharing cooking techniques, nutritional information, and her stories as you cook together. She shares her historical and scientific knowledge about herbs and spices, their use in herbal medicine and how to cook with them in unexpected combinations.

You’ll prepare a unique, traditional Cycladic meal outside the mainstream of Greek food. Your meal highlights local cheese, vegetables, legumes, and grains. At the same time, you will experience how simple, quality ingredients cooked with love and care can nourish your body, mind and soul.

Welcome cold herbal tea, 2 hot and 3 cold dishes, various local cheese, local cured meat called “louza”, dessert, bottled wine, filtered water

Maria is a professional chef who has worked in the culinary world since 1998. She is passionate about Greek cuisine and loves to showcase the unique ingredients and flavors that can be found in the various regions and islands of Greece. Maria strongly believes that Syros is a herbal paradise. She now specializes in collecting and using wild herbs, local wild spices and greens in her cooking combining healing and pleasure. She cooks with organic products from local farms, exceptional Cycladic cheeses, and grains which give the dishes a unique, fresh, and often unexpected flavor. She loves creating food that has a strong sense of place by using local ingredients and techniques. Maria’s cooking workshops present a journey into time. Feeling the amazing flavors of wild herbs and spices, the history and culture of Syros on your plate while enjoying Greek hospitality at its best is what you will experience in her hands on cooking classes.
