This is a hands-on cooking experience using foraged wild herbs and spices. Maria, who has broad culinary knowledge, long experience, and a deep appreciation and respect for all kinds of Greek ingredients and plants, will guide you through the process, sharing cooking techniques, nutritional information, and her stories as you cook together. She shares her historical and scientific knowledge about herbs and spices, their use in herbal medicine and how to cook with them in unexpected combinations. You’ll prepare a unique, traditional Cycladic meal outside the mainstream of Greek food. Your meal highlights local cheese, vegetables, legumes, and grains. At the same time, you will experience how simple, quality ingredients cooked with love and care can nourish your body, mind and soul.
